Please advise how to increase the number of items displaying on home, product and product categories page?
If users can also just scroll down and have an option for load more same as on mobile view.

There's no such option as changing number of products displayed on Homepage.
You can manage number of items shown on Category page in your WP settings. Go to Settings => Reading => Blog pages at most.

Thanks, changed it to 60 and works.
Another question is to if possible to make the left categories to be static when scrolling down?

No. You'd have to rebuild the theme to do that.
