Raphael theme - changing the order of items on a Product category page

How do I chance the order of items on a Product category page.
I cannot see how these are ordered. It does not appear to be alphabetically. It doesn't seem to be in date added order either.
I want to be able to change the order so that like items appear together for easy comparison.
At the moment my products seem to appear in a random order and this does not seems to make any sense for the customer.

Hello,

Products on Category page are ordered by popularity (i.e. number of orders, desc).
This sorting cannot be changed at the moment.

Is there a way to change the default sorting order? e.g. default to Newest and then I would be able to sort by date added.
