Product options currency dropdown

Hey,

Could you tell me what is impacted by changing the currency in the product options (see picture below)



This is only to display the amount in the currency selected in the form and there is no impact on the website, correct?
Is it better to leave $ even if we sell in € or it doesn't matter?

Help me to clarify please

What does it change to set dollars or euro, do you know?
Because all my products were set in euro and after updating the prices, all products went back to dollars and now I have to change them manually... But in the front-end Euro is still displayed. I would like to understand what is the logic behind.
