Problems with product updates

I do one check every week for "Product is no longer available".
I set that if a product that is no longer in stock sent it to draft.
I see that there are some products that are in Draft, but they are on my site "in stock".
it's not good.

What really needs to be done?
Set to draft or set to zero.?
