As the title says: Is there a way to check if a product doesn't exist on aliexpress anymore?
I had an issue that I was selling an item on my store that was no longer in aliexpress and item was ordered in my store. So is there any way I can check links to products that I sell are still sellable?

If you do a regular update of your products - plugin remove products that are not available anymore in drafts. We recommend to update your products once per 3 days.

You can set a stock to 0 and product will be viewed on a site.

Go to the product, click edit, then click supplier and click "Update product"
