How do I control Stock quantity section so that it will not show on the site.
or alternatively change the number to something logical.
if I present 6126 in stock, its obvious Im dropshipping or will look unreliable.

Go to WooCommerce->Settings->Products->Inventory. Right at the bottom of this page you will see "Stock display format". You can choose from 3 options. Check attached screen shot for more reference. Hope that helps. Cheers!
