Disabling Item Stock

Hi Guys,
So in my shop, it shows how many are in stock (18820) how do I disable this number as I keep getting messages telling me there's no way I stock that many! If not, is there a way to say I have like 100?

You can edit it here.

Product page backend --> Product options --> General --> Quantity.

You can disable here.

Customization --> Single Product --> Enable quantity of orders
