A Few Questions Before I Buy

1. Can I set it up so that if someone's order is over $100 that it will automatically add something else to the order?
2. Is there an easy way to get the email of everyone who ordered into 1 spot?
3. How many themes are there for me to choose from?
4. Is this a single or multi site license?
