hi, i'm having an issue where product variations that i disabled have re-enabled themselves. why is this happening and how can i fix it? thanks.

Hello, dear client!
As far as I know, the disabled variations can be enabled again if you choose 'Disable/enable' when a variation disappears or is out of stock or/and 'Update automatically' when stock changes. If you want to avoid that you should just disable 'Update product' in Product options -> Supplier section.

it must be a bug in the script then because i don't have any variations set to 'Disable/enable'. i just need to update stock for enabled variations. i don't need to update the price or anything else. i think if i disable 'Update product', the stock will not be updated?

That's not a bug. That's how WooCommerce and the plugin work. The 'Disable/enable' option is in the Updates settings, not in the Variations Section.
If you disable 'Update product', such a product can't be updated when you do bulk update. You have to update such a product manually in Product Options.
