I solved my own question - sorry for being so dense.

I have a question / maybe a suggestion?
At the moment we have a product that has a price range 3.00 - 4.00 for instance. I am updating the prices in this range +10 so $13 - 14. I want to just set all variations to $14 instead of $13-14. So I can do that on Woocommerce.
Now, if I leave "update this product" checked, it reverts my price back to 13-14. If I uncheck it and the product goes out of stock, I won't know, correct?
So how do I keep the price $14 on every variation AND know the stock level?
If this isn't possible, I'll write it up as a suggestion. Automatic updates should be "everything" or "everything but price" or (ideally) "tick which things you want to automatically update."
(Turns out it's already possible ...)
