Is there a way to price products individually or by category, instead of using the pricing formulas?

Yes. Just edit the product and change the price in the price field .. then save. But you won't be able to use the Update functions ... or the price will change back again.

In WooCommerce? There doesn't seem to be a price field I could find on products that are imported.

Yes there is ... Scroll to Product Data and click the General Tab. It's only for Simple products. Doesn't seem to be available for variations with separate prices per variation.
